How Cooking Methods Affect Nutrient Retention in Foods

Have you ever wondered if your cooking methods are retaining the nutrients in your food or sending them down the drain? Let's see how frying, boiling, and grilling can impact the nutritional value of our meals!
Frying
Frying adds that irresistible flavour, taste and crunch to plantain, yam, and akara, but did you know it can also add extra calories? While frying retains fat-soluble vitamins like A, D, E and K, it can reduce the levels of water-soluble vitamins like B and C. The oil you use matters as well! Go for healthier oils like palm oil, groundnut oil or vegetable oil.
TIP: Avoid reusing oil as it can form harmful compounds that aren't so friendly to your health (become carcinogenic). Its safer to immediately use the oil to make stew than reuse several times. If you must store make sure you sieve it before storing in an airtight container and use up as soon as you can.
Boiling
Boiling is an easy method for rice, beans, yam, and vegetables like ugu and spinach. It’s a great way to keep most minerals intact. However, if you're not careful, you might be losing out on vitamins B and C, which can leach into the cooking water. Overboiling can strip veggies of their vibrant colors and nutrients.
TIP: Use less water, and cook for shorter periods to keep those nutrients where they belong—in your food! Save the water and use it in soups or stews to make the most of the lost nutrients.
Grilling
Suya lovers, this one’s for you! Grilling meats, fish, or even corn preserves most vitamins and minerals while adding a smoky flavor we love. The high heat of grilling can help lock in nutrients and flavors without adding extra fat. However, be mindful of overcooking, as it can reduce some heat-sensitive vitamins especially if food is cooked at very high temperatures or for too long. Additionally, avoid charring (burning) as charred portions can contain harmful compounds that may be carcinogenic if consumed in large amounts.
TIP: Grill on medium heat to keep your food nutritious and safe from harmful chemicals.

Each method has its benefits:
• Frying enhances taste but watch those calories!
• Boiling is quick and easy but can leach nutrients—save that water!
• Grilling preserves nutrients but be mindful of temperature.
