Have you tried cold brewing an aged white tea cake? 🧊

This is our 2019 Baimudan. A tea we usually reach for when we want something warm and comforting — brewed hot, or even boiled to bring out its deeper, sweeter side.

But aged white tea can be surprisingly good cold too.

So we tried it two ways:
🧊 Ice brew — slowly brewed as the ice melts
💧 Cold brew — leaves straight into cold water

Same 2019 Baimudan, two quite different expressions.

Ice brew: stone fruit, floral, oily texture, sweet
Cold brew: herbaceous, jujube, crisp, more tea

Turns out aged white tea doesn’t have to wait for sweater weather. 🌞

Grapes and Long Jing are such a good combination 🍇

I’ve been playing around with cold tea drinks a lot this summer, and this one turned out delicious. The grapes add a fresh sweetness, while the Long Jing keeps it green, nutty and umami.

For one glass:

• 1g Long Jing
• 50mlwater
• 5–6 green grapes
• Ice

Brew the Long Jing and let it cool. Muddle a few grapes in the glass, add ice, then pour the tea over. Give it a little stir and that’s it.

Also, somehow Long Jing tastes even better from a cocktail glass. 🥂

Gratitude is a central part of the tea culture. Every time we pack a selection of our leaves, we are incredibly thankful for the community that appreciates the craft behind them.

To express this, we teamed up with the wonderfully talented to design an exclusive, minimalist thank-you card that will now be included in our customer orders.

We wanted the design to reflect the mindfulness of a quiet brewing session. Liyang’s signature line art perfectly captures that exact feeling—the weight of a real cup, the simplicity of a single moment.

We had one Silver Needle bud.
We had one lychee.
Naturally, we made cold brew. 🍃

Sometimes the smallest ingredients make the biggest impression.

Have you ever tried tea with fresh fruit?

One of the nicer parts of running a tea brand is that when the fresh spring batches finally arrive after weeks of waiting around harvest season…

you get to enjoy them first.

This year’s Anhui lineup has been especially dangerous for productivity.

Taiping Houkui that smells like orchids the second the leaves hit the glass, chestnut-heavy Song Luo, silky Huangshan Maofeng, and a beautiful Jiuqu Hongmei from Shifeng that we honestly did not expect to love this much.

So before these teas disappear into pouches and orders,
we’ve mostly just been sitting in the sun drinking them ourselves.

Quality control, technically.

Everyone else finished their spring teas drops weeks ago.

Anyway.

Our freshly sourced Anhui Toucai batches are finally here.

Guess the teas from the leaves:

* one giant and orchid-y
* one hairy and floral
* one ancient chestnut bomb
* one Shifeng red tea hiding in the corner

Local material, different hands

Mogan Huangya — picked early April, just after rainfall.
Sourced through Auntie Pan from a small hillside farm in the bamboo forests.

Locally, people just drink it as green tea.

But there’s more going on:
umami, florals, chestnut — and a subtle olive-like grip that gives it real structure.

We only brought back 500g.

Should we try to source more next year?

Gongfucha, Amsterdam.

Milanxiang dancong on a cold, windy day —
with a proper Dutch lunch.

Somehow tea tastes different outside.
