One thing that I am grateful for during these times and with the layers of uncertainty is all of the self cheffing that I now have time for! Never have I felt more inspired to create recipes and menus that boost immunity, maximize nutrition potential, prevent inflammation in the body and for good gut health. Last night I made my favorite ayruvedic inspired sprouted mung bean and fennel soup with leeks, cardamom and coconut.
