basil.and.lime came up with this amazing Apple, Fig, & Coffee Cake, served with a Maple Cream, using our Flat White coffee chews. We are drooling through the screen right now! Save this recipe and make it later 😏
Apple, Fig, & Coffee Cake with Maple Cream

- 4 fresh figs, sliced
- 5 dried figs, finely chopped
- 75ml hot strong black coffee
- 3 Flat White Littos coffee chews, crushed (optional)
- 200g butter, softened
- 1 c soft brown sugar
- 4 eggs
- 1 1/2 c plain flour
- 2 tsp baking powder
- 1 tsp ground cinnamon
- 1/2 tsp ground ginger
- 1/4 tsp ground nutmeg
- 1 apple, peeled and diced
- 4 Tbsp sour cream (or plain yoghurt)
- 100ml heavy cream
- Maple syrup

+ Preheat the oven to 180C. Grease a 23x23cm square baking tin and line the base with baking paper
+ Soak the dried figs in the black coffee with the coffee chews.
+ Meanwhile, in a medium mixing bowl, combine the flour, baking powder, cinnamon, ginger, and nutmeg.
+ In a large mixing bowl, cream the butter and sugar together until pale and thick. Beat in the eggs, one at a time.
+ On a slow speed, beat in the flour until just combined. Fold in the coffee mixture and then the sour cream. Fold in the apples.
+ Transfer the cake batter to the prepared tin and gently press the fresh figs into the top of the cake.
+ Bake for 30 mins. Drizzle the top of the cake with maple syrup and bake for a further 5 mins, or until an inserted skewer comes out clean. Remove from the oven and allow to cool for at least 15 mins before serving.
+ Lightly whip the cream and drizzle with maple syrup. Serve with the cake.
