Celeriac, pineapple and feijoa kosho.

A bright, elegant dish with clean richness from the salmon, soft earthiness from celeriac and a zesty lift from pineapple and feijoa kosho.

Feijoa kosho is our New Zealand take on the Japanese condiment, made by fermenting feijoa with fresh green chilli and salt. It brings citrus-like acidity, gentle sweetness and a slow, spicy heat.

Our single vineyard Waiheke Island Chardonnay is fine, elegant and quietly expansive, with citrus flowers, lemon curd, brioche, nutmeg and baking spice carried by a creamy texture and complex saline line.

Today is World Bee Day, a reminder of the quiet role bees play in our ecosystem, biodiversity and food systems.

At Tantalus, our hives are part of the wider Estate environment we care for every day on Waiheke Island. The bees support our gardens, vines and surrounding landscape, helping keep the land healthy and full of life.

From the hive, we produce small-batch estate honey, used throughout the restaurant and shaped by the natural character of the island.

This World Bee Day, we celebrate the connection between land, vines, food and bees, and the small but essential role pollinators play in the way we grow, cook and gather.
