Cellar Notes from Dave ~ Čuvar Guardians Syrah 2024.

Dave takes us through a milestone wine for Čuvar - the first-ever Syrah in the Guardians Collection.

Sourced from our Cornerstone Vineyard in the Gimblett Gravels and made from the Limmer Clone Syrah, this small-production release was selected from just a handful of barrels showing the complexity, savoury character and balance that define a Guardians wine.

Expect classic Hawke’s Bay Syrah notes of blackberry, boysenberry and dark spice, layered with rosemary, lavender and savoury herbal characters.

Cellar Notes from Dave ~ Čuvar Iris Pinot Noir.

The fruit for this wine comes from Ballochdale one of the Fistonich family’s well known southern vineyards — among the southernmost in Marlborough and sitting high at 300m above sea level. A site that delivers Pinot Noir with brightness, purity and lift.

And yes, Dave did say it pairs with charred lettuce.... Think romaine or little gem, kissed by flame, finished with a bright, simple vinaigrette.

Cellar Notes from Dave ~ Čuvar Guardians Pinot Noir 2023.

Dave talks through the Čuvar Guardians Pinot Noir 2023, grown at Ballochdale in Marlborough - one of the region’s most southern and highest altitude vineyard sites, sitting 300 metres above sea level in the Aware Valley.

For the Guardians Collection, the focus is on selection. Certain parcels stand out in the vineyard for their intensity and character, and only those parcels make the cut. In the winery, the process continues with careful barrel selection, isolating the very best fruit from the vintage.

The result is a Pinot Noir with vibrancy and ripe red fruit, layered with depth, structure, and subtle spice from time in French oak. Still youthful, yet already showing complexity, this is a wine built to age and reward patience.
