Perhaps behind every great Hawke’s Bay w**e is a viticulture team up at 3 AM, battling the frost. ❄️

We couldn’t be more grateful for the dedication that goes into the vineyards during these cold early hours: the kind of passion you might not see, but can certainly taste.

Maria Salomé Ebner von Eschenbach could hardly have imagined that, three centuries after her lifetime, her portrait would sit quietly in museum collections, leaving people to wonder about her life across the corridor of time.

Still less could she have imagined that her descendants would one day give her name to their finest Chardonnay from Elephant Hill — a w**ery in the other hemisphere, where there is neither elephant nor hill, just breathtaking Pacific Ocean views and very good w**es.

Here in the sunshine of Hawke’s Bay, we sometimes wonder what she would make of the w**es that carry her name. Made in limited quantities, Salomé is selected from our finest vineyard blocks, best batches and best barrels.

When that golden w**e is poured, Chardonnay aficionados might appreciate something remarkable from Aotearoa — or perhaps remember the good old days before a bottle of premium white Burgundy began to feel like a financial decision.

Then how about you, my friend?

What do you enjoy most in your glass: perhaps grapefruit peel, nectarine, subtle white flower, hints of wood spice and smoke, flint, sea salt, minerality, or that lingering finish? And what stays with you: its purity and vigour, freshness and finesse, tension and poise, sophistication and complexity?

Who would you drink it with? Or perhaps with no one at all — just a precious moment entirely to yourself.

What’s in the glass is only ever half the story. The other half? You and time.

We seemed to have had a proper winter here in Hawke’s Bay, which naturally helps suppress some pests and disease pressure in the vineyard, so not all bad!

Now, with spring just around the corner, the team has started pruning our Chardonnay and Sauvignon Blanc vines at our SEA Vineyard in Te Awanga since last Monday.

The inter-row cover crops are growing beautifully too, bringing the fresh signs of the season ahead😀

Our Sparkling Rosé is like a postcard from summer, and thank you The Real Review for featuring it in this week's Top Drops!

98% Syrah with a touch of Viognier, it's our only w**e under a golden crown cap — and it's versatile enough to pair with everything from fish and chips to light cheeses, roast chicken, or salmon in any season, humble enough to grab off the shelf without taking out another mortgage, and special enough to make your weekend a little scintillating.

Let's hear what Stephen Wong MW had to say about this fun fizz:
"Really quite strikingly flavoured... Light coral-pink. A fruit-driven and mouth-filling rosé which holds a light effervescence. It bursts with ripe blackberry, violet, anise and plum flavours. Weighty yet dry, this is almost as flavoursome as a chilled red and finishes with lovely savouriness and peppery spice."

He also called the half-bottles "a nice touch and perfect for taking out on those rare sunny winter days." Exactly the kind of fun we had in mind — spot on!
