Spotlight on: Basil

Sweet basil is one of the most popular herbs in home gardens because of its strong flavour, which is so useful in the kitchen. Grow in a warm spot, directly the garden (next to tomatoes) or potted inside in the sun. Basil often stars with tomatoes, but also gets around in essential oils, as dried and fresh, in herb butter, part of herbal vinegars, tea, salads, pasta, soups, pesto & meat dishes.

Freeze dried vs other dried…
The jar lid shows deep green freeze dried basil, the scent is strong and similar to the fresh plant.
The smaller pieces are dried & rubbed basil is that which you pick up in the supermarket. It smells quite different to the fresh and freeze dried basil, and is much more varied in colour:greens browns & purples.

Spotlight on: Lemon Verbena

Grown for it's strong lemon aroma and flavour, this herb is often used in teas and cosmetics. It is a deciduous shrub growing 1.5-3m tall and tolerates the Hawea climate well in a nice sunny, sheltered location. Shortly, in late summer plants will flower tiny white to lavender blossoms. It might possibly be my favourite herb, I just love brushing past it's leaves.

The leaves and oil can be used as a fragrant addition to salads, in tea, herbed honeys or stuffing.

The freeze dried leaves retain most of their scent and can be easily crushed for use in your cooking and drinks.

Home grown goodness.
My dad was keen to be able to have home grown goodness in his diet (Barb has an epic veg garden) I was stoked to be able to dry a bunch of their garden produce for him, and powder it so it could be consumed with ease & without injury.
It was so awesome to see family this weekend, the first visit since that fateful pre-lockdown Wanaka Show weekend! Love you guys heaps 🤗.

Beautiful Cherries, Fresh & Freshly Dried.

The aim was to dry them whole, but very difficult and many were sticky in the centre…. Which was AMAZING. A happy accident.

Aside from eating these fruit lollies, some have been ground into sugar, baked into chocolate cakes and added to the daily Museli. Ensuring some will be tucked away for venison stew this winter will be tricky 😋

The new packs have arrived!

Aha, the evil plastic bag you say. Well, this one has a high moisture barrier, is #4 recyclable (see you local soft plastics recycling bin) and is beautifully clear so you can see the goods.

Unfortunately the compostable bags didn’t stand up to the moisture requirements, and glass jars are prohibitively expensive unless there’s a good jar return scheme.

Bring on new tech in the packaging industry!

Testing, testing! I've been beavering away testing products for clients over the last month, here's a sample of the goods:

1 ~ Central Otago Apricots hard to beat!
2 ~ Spring Flowers forever
3 ~ Rose Petal Confetti, keeps its scent.
4 ~ Corn in the cupboards
5 ~ Mega berries from the 1yo crop at
6 ~ Amped up spring fruit museli
7 ~ Local Cherries
8 ~ Stewed Rhubarb
9 ~ Excess veg for kids snacks
10 ~ Summer fruit box for a friend

Most used product so far: lemon powder.

Pleased to get my fridge back. And now I have ham chips 😋

Bagged some up for a camping feast, later in Autumn. Really pleased with the result, tastes like the real thing, smells delicious and readily reconstitutes with moisture.

For when it’s 5 o’clock somewhere but there’s no fresh lemons on the gin tree.

These taste incredible. You can eat the entire slice and have a medley of lemony flavours from zing to mellow. Light as a feather, crisp but not dense.

Garnishes, drinks, lemon chicken 🤤 baked in fish, powdered ingredient, lemon salt….

Testing the good stuff 🥳 Before (frozen) After (FreezeDried)

Everyone knows are the best, and we both happen to share the same dream to fill everyone’s homes with delicious crunchy food lollies. Teaming up, we’ve been testing the drying process and it is LONG 🕰️ but the results are DELICIOUS 🤤

Total dry time = 40-46 hours.
Total consumption time = 🍓🍓🍓🍓with our kids around it would have been 4-6 minutes. HOWEVER, we’ve packed up some snack serves and popped them in the shop for punters to purchase. Hope those lucky folk enjoy Store Batch 1!

Testing is ongoing, until we’ve got the perfect product and the best quality, most efficient process.
