Simple Boondi Ladoo recipe
2 cups of Besan (chickpea Flour)
1 tsp cardamon powder
Enough water to make batter.
1 bottle ghee for frying
Boondi strainer or perforated spoon
For syrup
2 cups white sugar
1 cups water
Method
Syrup
Prepare sugar syrup to one thread consistency by boiling sugar and water. Once have reached to one thread Keep the syrup warm.
Besan batter
1. 2 cup Besan in a bowl, 1 tsp cardamon powder
2. Add enough water little by little to form a paste neither thick nor thin. Mix well to avoid lumps.
3. Heat ghee in a wok or fry pan on medium heat.
4. Hold the perforated spoon about 4 inches above the hot ghee and fill a ladle with the batter.
5. Pour the batter into the spoon. Now use another spoon to gently press the batter through the spoon and into the ghee. It will fall like tiny drops (Boondi) Fry them to golden color.
6. Take out the fried boondi from the ghee and add it to the syrup. Leave in the syrup for approximately 2 minutes or until it has absorbed syrup well. Take out the boondi from the syrup and let it cool on a tray/bowl.
7. Rub bit of ghee on your hands and Roll into round balls. Store in an airtight container once cooled. They stay fresh for a week.
