Learning from the Experts: Coffee Degassing

As I continue learning more about coffee roasting and brewing, one advice I keep hearing from coffee experts is this: don’t rush to brew freshly roasted coffee.

After roasting, coffee beans release carbon dioxide (CO₂) that was formed during the roasting process. This natural process is called degassing.

Experts recommend allowing the beans to rest for a while before brewing because too much trapped gas can affect the extraction and flavor of the coffee.

From what I learned:

☕ For pour-over or drip coffee – allow about 1–3 days of rest
☕ For espresso – about 3–7 days after roasting

During this time, the beans slowly release gases and the flavor becomes more balanced and clearer in the cup.

So while fresh roast is important, good coffee also requires patience. Let the beans breathe a little before brewing.
