Long weekend na hapit try ninyo ni mga sukibesh. Super yummy og sayon ra himoon. Perfect para sa family labi na sa mga kids.

Corn Hotdogs:

Original recipe yields 16 servings

Ingredients:

1 cup yellow cornmeal

1 cup all-purpose flour

¼ teaspoon salt

⅛ teaspoon black pepper

¼ cup white sugar

4 teaspoons baking powder

1 egg

1 cup milk

1 quart vegetable oil for frying

2 (16 ounce) packages beef frankfurters/hotdogs

16 wooden skewers

Directions:

Step 1

In a medium bowl, combine cornmeal, flour, salt, pepper, sugar and baking powder. Stir in eggs and milk.

Step 2

Preheat oil in a deep saucepan over medium heat. Insert wooden skewers into frankfurters. Roll frankfurters in batter until well coated.

Step 3

Fry 2 or 3 corn dogs at a time until lightly browned, about 3 minutes. Drain on paper towels.

A few tips: (1) Pre cooked and dry the hotdogs using paper towels prior to dipping to remove all moisture, (2) make sure the oil is not to hot, (3) pour the batter into a tall glass prior to dipping, which will give it that perfect corn dog shape! I have a gas stove, and these were done in 4 minutes.Fun, easy to make, and tastes better than any corn dog you can buy.

Yellow Cornmeal Porridge🌽

Jamaican style lugaw. Perfect sa ting uwan.

NOTES:

-Be sure to stir the porridge frequently during cooking to avoid any lumps in your porridge.
-Adjust flavorings and milk to taste. -However, nutmeg and vanilla are essential in making Jamaican Porridge.

Ingredients:

▢2 cups water

▢2-3 cups coconut milk

▢½ cinnamon stick

▢½ teaspoon salt adjust to taste

▢1 cup yellow cornmeal

▢1 teaspoon vanilla extract

▢½ teaspoon nutmeg adjust to taste

▢1/2Sweeteners (condensed milk/ brown sugar

Instructions:

Add about 2 cups water and 2 cups coconut milk to a heavy large saucepan. Throw in ½ stick cinnamon stick. Bring to a boil.

Gradually whisk in the cornmeal, until you have add the whole thing in the pot, a little bit at a time and keep stirring with a wooden spoon to prevent any lumps.

Reduce the heat to low and cook until the mixture thickens about 15 minutes.

Add flavoring vanilla extract, and sweetened condensed milk.

Adjust consistency with coconut and/or water if desired.

Turn off the heat. Serve hot.😋
