A quick stop at the famous Batac Riverside Empanadaan yesterday turned into a memorable conversation with Nanay Gloria โGloryโ Aduana Cocson, considered to be the OG who have been selling empanadas for 66 years! โจ
One thing I learned from her is that the empanada we know today wasnโt always the same. She shared that her old recipe included โaramangโ, but she eventually removed it after customers told her they had allergies. She also adjusted the amount of โmunggoโ because some of her regular customers had gout.
I found that story fascinating. It shows how her empanada didnโt just become famous because of its taste, it evolved through years of listening to the people who kept coming back.
