Trying to get back to baking sourdough bread. My starter looks kind to me. I stopped baking for almost half a year, I guess It feels how I struggle inside me. It still gives me good bread. Well, since my basil plants are flourishing and cheering me everyday, I tried the new inclusion on my sourdough. It's fresh basil, fresh garlic and cheese. The smell in the house is so Italian. I tried baking a small baguette too and a little focaccia which the photo will soon follow because it is still fermenting.

Attempt to bake Sourdough cinnamon roll.
My bread dough ingredients are:
starter, flour, water, salt and egg

I use coconut oil instead of butter on the spread mix of cinnamons and sugars.

I overproofed the dough. The rolls are crispy outside and soft inside. Not so sweet. Perfect partner on a creamy coffee.

Temp: 250C
The edge is quite stiff and gummy. The center is crispy. I drizzled coconut oil. I added steam here.

Trial 4/25
Baked using oven sheet pan with parchment paper.
Temp: 300C
The whole crust is crispy but not stiff, chewy but not gummy. I added cheese and use butter toppings instead of drizzling oil.

My family loves baked today 4/25, with no edge crust left.

Sourdough Pizza Testing
Dough Ingredient:
Sourdough starter, flour,, water, salt and coconut oil
Toppings:
Tomato sauce, fresh oregano, fresh garlic and cheese

Remarks:
I just need to improve the handling to make the dough center thin. Check the temperature since I am baking from a convection oven. But the dough itself is umami. I also need to add steam on the initial baking time.

Sourdough Pizza without pizza sauce. Just dump whats left in the fridge. Tirang mangga, tirang cheese, sibuyas, tirang ham at sponsored mushroom 😁. It does not look good pa. Practice more. Masyado pa ako nanggigigil sa lambot ng dough. Pero knowing na ang dough o yun crust nito ay healthy. Just the sourdough starter, flour, salt, water and coconut oil. Fermented for more than 60 hours. Super healthy to tummy. Voila. 😆😁. Feeling Vito Iacopelli.
