Premium eggs have been identified to represent the lowest-cost animal source for proteins, vitamin A, iron, vitamin B12, riboflavin, choline, and the second lowest-cost source for zinc and calcium. Typically the orange yolk contains more vitamin A and beta carotene. They become orange for a similar reason that carrots, also high in beta carotene, are orange. This color change and improved vitamin content is directly related to the quality of food the hen consumes.
