Mushroom Binagoongan is a Filipino vegetarian twist on the classic pork binagoongan.
Instead of pork, oyster mushrooms is sauted & simmered in a savoury-salty-sweet sauce made from bagoong, garlic, chili and vinegar.
Salty and funky from the bagoong, balanced by the earthiness of mushroom and a hint of sourness & spice .
Best eaten with lots of rice plus a side of sliced tomatoes or fried eggplant to cut through the richness.
