Chef Annie Carmona-Lim ( Founder of Chocolate Lover Inc.) has been baking since 1977. To perfect her craft, she enrolled in various schools in Metro Manila. Her hunger for more knowledge compelled her to enroll in schools abroad. She took a Master’s Course in Cake Decorating plus courses in Gumpaste and Pulled Sugar Technique at the Wilton Cake Decorating School in Woodridge, Illinois, USA.
Then she enrolled in the Culinary Institute of America, California, acquiring expertise in the making of European pastries, along with chocolate fundamentals and flavor dynamics. She mastered the art of Chocolate Manufacturing and other confectionery skills in Solingen, Germany. This earned Chef Annie the title “Chocolate Queen”.
Chef Annie is a cancer survivor. She believes her life was spared because she has a mission to unselfishly share her talents and promote enterpreneurship in her field.
The mission is now a reality. In 1995, Chef Annie built her own castle, The Castle of Baking and Confectionery Arts, where she shares her knowledge of baking, chocolate art and cake decorating to baking enthusiasts, hobbyists, bakery owners and housewives. She encourage them to engage in a home business wherein they can earn without leaving the comforts of their homes.
