Ulamserye your ulitimate ulam guide....

Presents....Chicken Hamonado

Ingredients:
1 kg chicken
1 can pineapple juice 240ml
4 cloves garlic chopped
1 pc onion chopped
4-5 pcs pineapple slices
1/4 cup sugar
4 tbsp cooking oil
1 tsp salt
2 tbsp soy sauce
black pepper

Instructions:
Put chicken in a bowl or container.
Pour in pineapple juice.
Rub in sugar, soy sauce, salt and a dash of black pepper to the chicken.
Mix well, cover the container and marinate overnight.
Heat cooking oil in a pot.
Put in chicken and fry each side of the chicken for 6 minutes.
Remove chicken from pot and set aside.
On the same pot, sauté onions.
Add in garlic once onions are translucent. Sauté until garlic is golden brown.
Add pan fried chickens.
Pour in the marinate, cover and bring to a boil.
Simmer each side of the chicken for 8 to 10 minutes.
Add in sliced pineapples and simmer for another 5 minutes.
Remove from heat, serve and enjoy.

Presents....Pineapple Chicken

Ingredients:
1 kg chicken, cut into serving pieces
1 cup pineapple chunks, from can (reserve juice)
1 pc onion, chopped
4 cloves garlic, minced
1 pc carrot, cut into wedges
1 pc large-sized potato, cut into wedges
1 pc medium-sized bell pepper, cut into strips
2 tbsp fish sauce
1 cup all-purpose cream, (or coconut cream)
3 tbsp cooking oil
salt and pepper, to taste

Instructions:

In a bowl, pour in the pineapple juice (from the can with the pineapple chunks) and soak the chicken. Marinate for 30 minutes.

In a cooking pot, pour in and heat cooking oil over medium heat.

Add-in the potatoes and carrots. Cook until lightly browned. Transfer to a plate and set aside.

In the same pot, add in the garlic and onions. Saute until soft and aromatic.

Add-in the chicken. Cook while stirring occasionally until lightly browned.

Add-in the same pineapple juice earlier. Bring to a boil.

Add in the pineapple chunks and pour in the all-purpose cream then cover and simmer for 20 to 30 minutes or until the chicken is tender.

Add in the bell peppers and add back in the potatoes and carrots. Pour in the fish sauce and simmer for another 3 minutes. Season with salt and pepper.

Transfer to a serving bowl or serving tray. Serve and enjoy!

Ingredients:
* 1/4 cup canola oil
* 2 medium potatoes, peeled and quartered
* 2 large carrots, peeled and cubed
* 1/2 green bell pepper, cored, seeded and cut into cubes
* 1/2 red bell pepper, cored, seeded and cut into cubes
* 1 onion, peeled and cubed
* 3 cloves garlic, peeled and minced
* 1 (3 pounds) bone-in chicken, cut into serving pieces
* 1 tablespoon fish sauce
* 1 cup coconut milk
* 1 cup water
* 2 tablespoons curry powder
* salt and pepper to taste

Cooking Procedure:
1. In a wide pan over medium heat, heat oil. Add potatoes and cook for about 2 to 3 minutes or until lightly browned and tender. Remove from pan and drain on paper towels.
2. Add carrots and cook for about 1 to 2 minutes. Remove from pan and drain on paper towels.
3. Remove excess oil from pan except for about 1 tablespoon. Add bell peppers and cook for about 30 to 40 seconds. Remove from pan and set aside.
4. Add onions and garlic and cook until softened.
5. Add chicken and cook, stirring occasionally until lightly browned.
6. Add fish sauce and continue to cook for about 1 minute.
7. Add coconut milk and water. Bring to a simmer.. skimming any scum that may float on top.
8. lower heat, cover, and simmer for about 20 to 30 minutes or until chicken is cooked.
9. Add potatoes and carrots and cook for about 3 to 5 minutes or until tender.
10. Add curry powder and stir to combine. Continue to cook for about 2 to 3 minutes or until sauce starts to thicken.
11. Season with salt and pepper to taste.
12. Add bell peppers and cook for about 1 minute or until tender yet crisp. Serve hot.

Presents....Chicken Afritada

Ingredients:
* 600 grams chicken thigh part (or drumsticks)
* 1 cup tomato sauce
* 2 medium potatoes (quartered)
* 1 large carrot (sliced)
* 1 medium onion (cut in wedges)
* ½ red bell pepper (sliced)
* ½ green bell pepper (sliced)
* 2 cloves garlic (chopped)
* ¼ cup green peas
* 1 tbsp oil
* salt and pepper (for seasoning chicken)
* 1 pc chicken broth cube dissolved in 1 cup water

How to Cook:
* Wash chicken and remove excess fat and skin. Season with salt and pepper then set aside.
* Wash and cut up all vegetables to size.
* Heat oil in a pan over medium heat. Fry the chicken on both sides until half-cooked or color turns to light brown. Remove from pan and set aside.
* In the same pan fry potatoes and carrots until crisp-tender. Remove from pan and set aside.
* Using the same pan, add more oil if needed and saute onions until translucent. Then add garlic and saute until fragrant.
* Throw in the half-cooked chicken again and fry for 3 minutes. Add tomato sauce and toss chicken until coated with tomato sauce. Simmer for 3 minutes.
* Add the broth cube dissolved in 1 cup water and stir. Simmer for 5 minutes.
* Taste and season with salt and pepper if needed. Add cooked potatoes and carrots and simmer until soft.
* Add bell peppers and green peas and simmer for 4-5 minutes.
* Remove from heat and serve. Bon Appetit!
