Taco Fried Rice

For the best taste, use only J. T. Cano's Island Premium Rice.

Ingredients
3 to 4 cups cooked J. T. Cano's Island Premium Rice (preferably leftover rice)
2 tablespoons cooking oil
1/2 teaspoon salt
1/2 lb. ground beef 80% lean
1/2 pouch 1/2 oz. taco seasoning mix
1/4 cup chopped flat leaf parsley
1/4 cup water

Instructions
1. Sprinkle the salt over the cooked J. T. Cano's Island Premium Rice. Using a large spoon, gently toss the rice to distribute the salt equally and to avoid the rice from forming. Set aside.
2. Meanwhile, heat the cooking oil in a pan.
3. Once the oil becomes hot, put-in the ground beef and cook until it turns light to medium brown (3 to 5 minutes).
4. Pour-in the water and then mix-in the taco seasoning. Stir and continue to cook for 5 minutes or until the liquid evaporates.
5. Add-in the rice. Toss once in a while using a flat spatula. Make sure that you DO NOT press the rice with the spatula as the rice can stick with each other -- we want out rice to be as loose as possible. Continue to cook for 5 to 8 minutes in medium heat.
6. Transfer to a serving plate. Top with chopped parsley. Serve.
7. Share and enjoy!

Ingredients
1 cup uncooked J. T. Cano's Island Premium Rice
1 lb. ox tripe cleaned
1 lb. pig large intestine cleaned
4 eggs boiled and shelled
5 cups water for cooking
6 cups water for boiling
2 teaspoons beef powder or 1 beef cube
1 teaspoon turmeric powder optional
2 tablespoons minced ginger
1 medium onion minced
5 cloves garlic minced
2 teaspoons garlic powder
3 tablespoons cooking oil
1 head toasted garlic
1/4 cup chopped green onion
1/2 cup crushed chicharon
Salt and pepper to taste

Instructions
1. Boil 6 cups of water in a deep cooking pot.
2. Add the ox tripe, pig intestine, and 1 teaspoon salt. Boil for 2 to 3 hours or until soft. Add water as needed. Remove the tripe and intestine from the pot to cool down and then slice into bite sized pieces. Set aside.
3. Heat the cooking oil in a deep cooking pot.
4. Saute the onion, ginger, and garlic.
5. Once the onion is soft, add the tripe and intestine. Cook for 2 to 3 minutes.
6. Add the beef powder( or cube), turmeric powder, and garlic powder.
7. Pour-in the water. Stir and let boil.
8. Add the rice. Allow the water to boil once more and then adjust the heat between low to medium. Cook for 30 to 45 minutes or until the desired texture is achieved. Add water if needed and stir every 5 minutes or so to prevent the rice from sticking on the pan.
9. Add salt and pepper to taste.
10. Transfer to a serving bowl. Add egg and top with green onions, toasted garlic, and crushed chicharon. Serve.

Ingredients
2 cups uncooked J. T. Cano's Island Premium Rice
1/2 teaspoon saffron
3 1/2 cup water
3 tablespoons melted butter
1/2 cup minced red bell pepper
1/2 cup minced green bell pepper
1/4 teaspoon salt

Instructions
1. Clean the J. T. Cano's Island Premium Rice by washing placing it in a bowl with water. Discard the water.
2. Put the rice on a cooking pot. Pour-in 3 1/2 cups water and add the butter, saffron, bell peppers and salt. Stir.
3. Heat the cooking pot (covered) in a stove top. Let boil.
4. Once the liquid starts to boil, adjust the heat to a simmer. Continue to simmer for 15 to 20 minutes or until the rice completely absorb the liquid. Try to gently stir the rice in the middle of the process to ensure that the ingredients are distributed evenly.
5. Transfer to a serving bowl with your favorite main dish such as beef kebobs. Serve.

Ingredients

Rice ingredients:
4 cups cooked J. T. Cano's Island Premium Rice
3 tablespoons rice vinegar
2 teaspoons granulated sugar
1 teaspoon salt

Cream topping:
1/2 cup cream cheese softened
2 tablespoons sour cream. optional
1/2 cup Lady’s Choice Mayonnaise
6 ounces Kani (imitation crab meat) chopped
1/4 cup cucumber diced into small pieces

Topping:
5 Tablespoons Furikake
3 tablespoons masago fish roe, optional
5 Tablespoons Lady’s Choice Mayonnaise
1 Tablespoons Sriracha sauce
1 avocado sliced

Instructions
1. Preheat the oven to 400F.
2. Combine rice vinegar, sugar, and salt in a bowl. Pop in the microwave for 15 seconds. Stir until the vinegar completely dilutes.
3. Put the cooked J. T. Cano's Island Premium Rice in a large bowl. 4. Combine with the vinegar mixture. Gently toss until the rice gets coated completely.
5. Spread the rice mixture evenly in a baking dish. Lightly top with furikake. Set aside.
6. Make the creamy topping by combining all the cream topping ingredients in a bowl. Mix well. Spread over the rice.
7. Top with remaining furikake. Bake for 18 minutes.
8. Make the sriracha mayo topping by combining 5 Tablespoons of Lady’s Choice Mayonnaise with 1 Tablespoon sriracha sauce. Mix well and then transfer into a condiment squeeze bottle. Set aside.
9. Remove the sushi bake from the oven. Top it with masago and avocado slices. Drizzle sriracha mayonnaise on top.
Slice a portion of the sushi bake and place over a small piece of Nori sheet. Serve.

Instructions
1. Heat oil in a pan.
2. Add garlic. Cook until it starts to brown.
3. Add pork adobo. Stir. Cook for 1 minute.
4. Put-in the cooked J. T. Cano's Island Premium Rice. Cook in medium heat for 3 to 5 minutes while gently tossing every minute to prevent the rice from sticking to the pan.
5. Season with salt and ground black pepper.
6. Add green onions. Toss.
7. Transfer to a serving bowl. Serve.

6 cups cooked J. T. Cano's Island Premium Rice refrigerated overnight
1 cup barbecued pork chopped
1 1/2 tablespoons soy sauce
2 teaspoons salt
8 to 10 pieces shrimps shelled and deveined
3/4 cup green peas
1/4 cup green onion chopped
2 pieces raw eggs beaten
1 teaspoon sugar
1 teaspoon ginger minced
1 teaspoon garlic minced
3 tablespoons cooking oil

Instructions
1. Heat cooking oil and sauté ginger and garlic.
2. Add shrimps and cook for a minute. Remove the shrimps and set aside.
3. Pour-in the beaten egg mixture and cook.
4. When the egg is cooked, divide into small pieces. Add the rice and mix well.
5. Put-in the soy sauce, sugar, and salt. Mix with the other ingredients.
6. Add barbecued pork. Cook for 3 minutes.
7. Add green peas and shrimp. Cook for another 3 minutes.
8. Put-in the green onions. Cook for 2 minutes while mixing with the other ingredients.
9. Turn the heat off and then transfer to a serving plate.

5 to 6 cups warm steamed J. T. Cano's Island Premium Rice
1/2 tablespoon annatto powder
1/4 teaspoon turmeric powder
3 tablespoons margarine
1 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon salt

Instructions
1. Melt margarine by using the microwave oven (about 10 seconds).
2. Combine turmeric and annatto powder. Mix well.
3. Put-in garlic powder, onion powder, and salt. Stir until everything is distributed.
4. Pour-in mixture on warm steamed J. T. Cano's Island Premium Rice. Gently mix so that the rice is coated by the mixture.

Cauliflower Rice

Mixed with J. T. Cano's Island Premium Rice for a delicious and nutritious meal.

Ingredients
1 medium cauliflower
good handful coriander, chopped
cumin seeds, toasted (optional)
1 cup cooked J. T. Cano's Island Premium Rice

Instructions
1. Cut the hard core and stalks from the cauliflower and pulse the rest in a food processor to make grains the size of rice.
2. Tip into a heatproof bowl, cover with cling film, then pierce and microwave for 7 mins on high – there is no need to add any water.
3. Put in a big bowl and mixed together with 1 cup cooked J. T. Cano's Island Premium Rice.
4. Stir in the coriander.
5. For a spicier rice, add some toasted cumin seeds.

Biko (Sweet Sticky Rice)

This naturally gluten-free, vegan Filipino sweet sticky rice dessert is good to cook with J. T. Cano's Island Premium Rice.

Ingredients
4 cups J. T. Cano's Island Premium Rice
3 cans (14 Oz. Can) Coconut Milk
2 cups Condensed Milk
2 cups Brown Sugar, Lightly Packed, Divided
1 cup Coconut Cream

Preparation
1. Soak J. T. Cano's Island Premium Rice overnight in about 8 cups water. Drain and set aside.
2. Pour coconut milk, condensed milk and about 1 cup of water into a pot and let it come to a simmer over medium heat. When simmering, add in soaked rice and stir constantly to prevent burning. Lower the heat if necessary. Preheat oven to 350ºF.
3. When rice is sticky, fully cooked, and almost dry (it will look like risotto), about 10–15 minutes, add 1 cup brown sugar. Stir well and take off heat. Pour into a lightly buttered 9×13 pan and smooth the top. Mix the remaining 1 cup brown sugar and coconut cream until smooth and pour it over the rice.
4. Bake for about 1 hour or until topping is dark brown and has thickened. Cool slightly before serving.

Filipino Garlic Fried Rice (Sinangag)

For an authentic Filipino taste, use J. T. Cano's Island Premium Rice only.

Ingredients
4 cups leftover J. T. Cano's Island Premium Rice
6–8 cloves garlic, pounded using mortar and pestle
oil
sea salt
freshly ground black pepper
finely chopped green onions (optional)

Instructions
1. Using your hands try to separate cooked J. T. Cano's Island Premium Rice into individual grains rather than big chunks, this will make your stir frying easy.
2. Place a large wok in high heat, add enough oil to lightly cover the surface of your wok.
3. If the wok starts smoking, lower the heat then add the garlic and fry until it turns golden brown.
4. Add the J. T. Cano's Island Premium Rice then continuously stir fry for 10 – 15 minutes.
5. Season with sea salt, freshly ground black pepper and finely chopped green onions.
6. Share and enjoy!
