Here's a simple and delicious Chicken Chilli recipe:

Ingredients:
1. *Chicken breast or thighs*: 500g, boneless, cut into bite-sized pieces
2. *Onions*: 2 medium, chopped
3. *Green chilies*: 2-3, chopped
4. *Garlic*: 3-4 cloves, minced
5. *Ginger*: 1 inch, minced
6. *Soy sauce*: 2 tbsp
7. *Chili sauce*: 1-2 tbsp (adjust to taste)
8. *Tomato ketchup*: 1 tbsp
9. *Olive oil*: 2 tbsp
10. *Salt and pepper*: To taste
11. *Spring onions*: For garnish
12. *Capsicum (bell pepper)*: 1, chopped (optional)

Instructions:
1. *Marinate chicken*: Mix chicken pieces with 1 tbsp soy sauce, a pinch of salt, and pepper. Keep aside for 15-20 minutes.
2. *Heat oil*: In a pan, heat olive oil over medium-high heat.
3. *Sauté aromatics*: Add chopped onions, minced garlic, and ginger. Cook till onions turn translucent.
4. *Add chicken*: Add marinated chicken and cook till it turns white and is almost cooked through.
5. *Add chilies and sauces*: Add green chilies, chili sauce, soy sauce, and tomato ketchup. Mix well.
6. *Add capsicum (if using)*: Cook for another 2-3 minutes till veggies are slightly tender.
7. *Season*: Adjust salt and pepper as per taste.
8. *Garnish*: Top with chopped spring onions.
9. *Serve*: Enjoy hot with rice, noodles, or as a snack.

Variations:
- You can add other veggies like carrots or mushrooms.
- Adjust chili sauce for desired spice level.

- Murghi (Chicken) 1 ½ kg
- Timatar (Tomato) 8
- Hari Mirch (Green chillies) 4
- Hara dhaniya (coriander leaves) 1 bundle
- Ghee (clarified butter) 1 cup
- Safaid zeera (white cumin) 1 tsp
- Garam masala 1 tsp
- Kali mirch (Black Pepper) 1 tsp
- Adrak Lehsan ka paste (Garlic, Ginger) 1 tbs
- Laal Mirch (Red Chili powder) 1 tbs
- Sabit dhanya (coriander seed) 1 tsp
- Kuti laal mirch (Crushed red chilli) ½ tbs
- Adrak bareek kati hui (Ginger) 2 tbs
- Leemo ka ras (Lemon juice) hasbe zaroorat
- Namak (Salt) hasb e zayeqa
- Sab se pehle zeera, kali mirch aur sabit dhanya pees lein.
- Aik karahi mein timatar, adrak lehsan ka paste, pisi lal mirch, kuti laal mirch, namak aur garam masala daal kar baghair tail ke bhoon lein.
- Ab chicken ko alag frying pan mein fry kar kay tayyar kiye huay masalay mein shamil kar dein.
- Sath mein pisa hua masala shamil kar kay khoob achi tarha bhoon lein.
- Aakhir mein bareek kata hua hara dhanya, hari mirch, adrak aur hasbe zaroorat leemo ka ras daal kar paish karein.

Ingredients:

For chicken wings

Chicken wings 16

Butter (melted) 1 tbsp

Garam masala powder 1 tsp

Green onions (slivered) for garnishing

Sweet and spicy plum sauce 3/4 cup

Salt as required

For sweet and spicy plum chutney

Butter or oil 3 tbsps

Fennel seeds (saunf) 1/2 tsp

Nigella seeds (kalonji) 1/4 tsp

Red chilli flakes 1/2 tsp

Black mustard seeds (rai) 1/2 tsp

Plums, (fresh or dried - pitted and quartered) 11/2 kg

Raisins 1/2 cup

Brown sugar (adjust according to taste) 1/2 cup

Salt 1/4 tsp

Coconut (fresh or dried - cut in ribbons or grated) 1/4 cup

Ginger (minced) 2 tbsps

Method:

Start off with preparing the chutney.

Heat butter or oil in a large saucepan over moderate low heat until hot.

Add fennel seeds, nigella seeds, black mustard seeds and chillies. Fry until mustard seeds pop and turn grey.

Add the plums, raisins, sugar, salt and simmer until thick for about 30 to 40 minutes.

Remove from heat and stir in the coconut and ginger. Turn off the stove and let it cool down. Fill into jars and refrigerate.

Now that the chutney is ready, start preparing for the chicken wings.

First of all preheat the oven to 375 degrees F.

In a foil lined baking pan, arrange chicken wing in a single layer. Bake for 20 minutes.

Now in a pan combine plum sauce, melted butter, and garam masala powder. Mix well.

Add chicken pieces and stir to coat with sauce.

Cover and cook on low heat for 30 to 40 minutes.

Sprinkle with slivered green onions and serve
