How to extend your stay in Poland after the visa expires?

Answer to this question is - to obtain Residence permit.

Poland Residence card (Karta pobytu - Stay Card) is a document which during its validity period confirms the identity of a foreigner during his/her stay in Poland. This document (together with a valid travel document, e.g. a foreign passport) entitles you to cross the Polish border multiple times without the need for a visa, as well as to enter other Schengen countries.

In order to apply for a residence permit or it’s extension in Poland, you must be in the territory of Poland!
