Spring, the season when flowers bloom and nature reawakens, brings ingredients to their natural peak. Many are also believed to help cleanse the body and aid digestion — something we’re all probably in need of in the wake of the (over)indulgence from the Hari Raya and Easter festivities — to reset and refresh!
So, if you’ve been waiting for a sign to refresh your palate, this is it. 🌸 Here are our top picks.
🔘 Fat Cow
From now until 20 June, Fat Cow showcases some of Japan’s finest produce through its Spring Shiki Omakase from $88++. This multi-course experience is designed to celebrate seasonality through washoku traditions. For instance, their soup appetiser showcases the in-season negi or Japanese spring onions; they infuse a mild gentle sweetness to balance its umami depth.
🔘 FLNT, 1-Atico
The only Nikkei-focused restaurant in town, FLNT, spotlights Sakura (Cherry Blossom) for spring! The 5-Course Dinner Set (from $148++ per person), available until 30 April 2026, weaves the ephemeral bloom into the menu in unexpected ways such as pickling the leaves and flowers to offer a lightly floral, gently acidic contrast that cuts through rich, protein-forward flavours.
🔘 Loca Niru
For the first time since its opening, Loca Niru renews its menu. This refresh is also a showcase of seasonality: the 8-Course Spring Menu ($298++ per person) features exceptional spring produce from Japan such as Japanese Pen Shell brightened with white strawberry vinegar and cherry blossom trout with lacto-fermented kumquat. Spring’s freshness is thoroughly reflected through these clean, refined flavours.
🔘 Shisen Hanten by Chen Kentaro
Available now until 31 May, Shisen Hanten by Chen Kentaro presents an 8-Course Chef’s Table Experience ($288++ per person) showcasing spring through ingredient-driven compositions. Highlights include Japanese spring asparagus with fermented beancurd sauce and sakura salt, alongside an A5 Wagyu beef spring roll wrapped with bamboo shoots, Comté cheese, and a crisp deep-fried finish for a rich, savoury bite.
