Love how this came out. Baking sourdough can be tricky and yet it still gives you a little surprise. I am loving the crumbs a lot here.

120g Nippn Botan BF
120g Canada 100 BF
60g WWF
230g water
60g levain
6g salt

Mix BF, water and levain, rest 45 mins. Add salt, rest 45 mins.
2 stretch and fold rest 30 mins each.
1 Bench light fold rest 30 mins
3 Coil Fold - first 45 mins, second 30 mins and finally CF at 45 mins. Total bulk fermentation 5 hours at 26C. Re**rd in fridge at 2C for 12 hours. Baked covered at 250C for 20 mins and 220C for 20 mins.

The above is just a basic information on the method I love to use. Depends on how fast the dough spreads during coil and fold, you can adjust the timing accordingly.

Been 2 weeks since I baked this. So I decided to do a little experiment. All the time I will prepare the basics like stretch and fold, coil fold etc in a cold room at 27 deg. This time I decided to let it bulk in room temperature (32 deg). Did the usual of stretch and fold, coil fold etc and watch the dough till it reaches bulk fermentation. It took almost 4 hours. I am happy with the result. Hopefully crumb shot to follow in next post as this is for someone.

Been a while since I posted my bakes. I have been busy with baking bread for the last 2 weeks that I forgot all about sharing them on my IG. Here's my loaf using starter discard. The weather here is humid and it makes the bread proof faster. Gonna have this with my home made curry chicken for dinner tonight.
