Private Lunch for who were presented with a reimagined menu with flavours from local culture and flavours.

Not Chicken Rice is a play on the local Hainanese Chicken Rice. The dressing was made by infusing flavours associated with Chicken Rice. Accompanied with cucumbers for authenticity. Pomegranate was added for some tang and sweetness to the dish. Topped with tender Kampung Chicken Breast to make it a healthy version of Chicken Rice.

Super Hakka Pork belly was created with my dialect group in mind, where the dish is usually served with Beancurd Sticks and Black Fungus. This was served with Ume rice and an Onsen egg.

The course ended with The Definitive Durian Cake from with excellent Mao Shan Wang mousse.

“Chicken Rice” Salad. Reimagining a dish that is much a loved staple in Singapore culture, into something that is a little more healthy and appetising to the health conscious. Fusing the flavours commonly found in the traditional dish into a dressing for the salad. Sous vide kampung chicken breast from my poultry seller at Tekka market. Added some pomegranate seeds for contrast and flavour.
