Tambaqui split today at work. It is super easy to prepare since the fish is already cut, cleaned and de-boned. So all you have to do is thaw season and your ready to grill

Today we did a partial harvest of one of our growing ponds. This pond has been in production for 10 months. Our average size fish was 3kg and the largest fish was 5kg. These ponds are stocked with Tambaqui and are ready to be harvested a head of schedule and exceeding expectations once again.

This is the first pond we started with in 2014. after many changes and trial and error we managed to find a way to exceed our expectations. This pond was stocked in march 2014 and harvested in May 2015 with 22.000kg of Tambaqui. Now its fully stocked with fresh water and ready for a new year !!!

This is our Tambaqui Split. Its a 2kg fish that is split in 2 pieces. It has been Gutted, Gilles, Scaled and most of the small boones have been removed. This allows the customer to simply thaw, season and prepare our fish within minutes.
In this picture the fish is marinated with just salt and pepper. Then barbecued and garnished with some lime.
