POV: an Italian chef enters THAIFEX and turns it into a pasta lesson 🍝🔥
Today I cooked Pasta e Piselli — real Italian comfort food, simple but dangerous when done properly.
No cream.
No fake “Italian sauce.”
No drama.
Just peas, pasta, technique, timing, and that sexy Italian chef energy Bangkok didn’t ask for but definitely needed.
For this recipe, I used Pasta Liguori from Gragnano and Pasta Allemandi from Cuneo — two different Italian pasta personalities, both serious, both beautiful, both made for people who actually care about texture.
