ah Laap Thot ลาบทอด. This dish is not served everywhere but it really should be, as it's sensational.
Just such a flavour explosion.
If you have ever had the Isaan dish of Laap, you'll know it is generally a minced protein, often pork, chicken or beef, though could be prawns or any other seafood and not necessarily minced.
The protein is simmered in a little stock or water before being added to a bowl where the flavouring ingredients are added; lime juice, roasted chilli powder, fish sauce and the secret ingredient - dry roasted sticky rice which is ground. This adds a nuttiness and some texture to the dish.
Well imagine that flavour profile in either a meatball or thin strips of meat. That's what you get with Laap Thot. Some will squeeze the mixture into meatballs and deep fry and some will just coat thinly sliced meat in the flavouring mixture and deep fry; either way, the dish sings and is magnificent with a cold beer.
