Evet, Yumurta Paketleme İşletmelerinde HACCP / ISO 22000 Dosyası ve sistemi zorunludur. Bilindiği üzere, yumurta paketleme hizmeti veren kuruluşların İl Gıda Tarım Müdürlüğü tarafından Denetlenmesi akabinde ruhsatlandırılmaları ve tanımlarına uygun olan işletme kodları verilmektedir.

İl Gıda Tarım Müdürlüğünün Yumurta işletmesine ruhsat verebilmesi için istemiş olduğu temel şart, İşletmenin ISO 22000 2018 Gıda Güvenliği Yönetim Sistemi ve bu sistem içerisinde tanımlanmış ve uygulanmış olan HACCP sistemi ve dokümanlarıdır.

Kırmızı Et Kesimhanelerinde HACCP Uygulamaları
Bir Kırmızı et kesimi için mezbahane kurulumu ve bu mezbahanenin HACCP şartlarına yani ISO 22000 şartlarına uyumu için projelendirme aşamasından başlamak gerekmektedir.

Öncelikle, mezbahanenin hangi sınıf ve kapsamda olacağı belirlenmelidir. Bilindiği üzere, hayvan kesimhanesi ve et entegrasyon tesisleri ile ilgili “Kırmızı Et ve Et Ürünleri Üretim Tesislerinin Çalışma ve Denetleme Usul ve Esaslarına Dair Yönetmelik “ bulunmaktadır. ISO 22000 Gıda Güvenliği Yönetim Sisteminin temel şartlarından bir tanesi de YASAL ŞARTLARA UYUM maddesidir.

Hayvan Kesimhaneleri(Mezbahane) Ruhsatları için İl İlçe Tarım Müdürlükleri Tarafından HACCP sistemi aranmaktadır.
