Official Season Start and Regulatory Compliance
Official Season Opening: June 15th
In strict compliance with the regulations of the Turkish Ministry of Agriculture and Forestry, the official crayfish harvesting season legally opens on June 15th.
Prior to this date, all activities—including deploying traps (kerevit sepeti), harvesting, and raw material reception at processing plants—are strictly prohibited to protect crayfish populations during their breeding and molting periods.
For international buyers and partners, this regulatory framework ensures two critical factors:
Full Traceability and Legal Compliance: The entire supply chain—from harvest to the issuance of official export health and veterinary certificates—is fully activated on June 15th. No export documentation can be legally processed for fresh catch prior to this date.
Pre-Ordering and Contract Allocation: The period leading up to June 15th is dedicated exclusively to market preparation, securing volume allocations, and finalizing custom brine recipes.
