Dreaming of cheese from Unwined Alexandria, Virginia

Happy Friday! Just a quick post today in the midst of all the hustle and bustle to let you know that one of our favorites, Pipe Dream Buche is back in the shop.🧀
This gorgeous ash-rinded goat’s milk cheese is produced by Brad Parker, who I like to refer to as the “Goat Lord.” At the very least, this Peace Corps member turned farmer can truly be considered a trailblazer in the industry, bringing his delicious goat cheeses to the DC area since the mid-eighties. You may have already tasted his fresh chevre next door on a cheese board at Revel, or seen these beautiful marbled logs in the case; this rind is not only eye-catching - it is actually strategically utilized in order to cut down the acidity, leaving you with a cheese that has some bright citrusy notes, but also a touch of minerality and slatiness that keep things interesting and dynamic. 🐐
I love enjoying this cheese on a piece of toast with whatever jam I am loving at the moment, but it’s pretty outstanding with just about anything. And tomorrow, you can try it for yourself with some wine at our Saturday tasting from 2-5! 🥂
Pipe Dreams Buche is now available at Unwined in half logs as well, so it’s a great time to give it a whirl and see if you love it as much as I do! I have a feeling this will be a big hit this summer, so come check it out and enjoy some with us tomorrow. 😎
