on't) but because I cook fast. I am a passionate and innovative cooking instructor who fuses culture and cuisine in my work and I proudly serve a dynamic global following. My mission is to deliver exceptional recipe creations through an extensive body of online and broadcast work focusing on a whole food, plant-based approach to everyday and special-occasion meals that are, “delicious, nutritious, fresh and fast.” My creations and cooking classes are available online via TheSpeedyVegan.com and my cooking videos are featured on the Vegan News Daily YouTube channel. I was born and raised on a dairy farm in Zimbabwe and bring a distinctively global context to my creations. I have traveled extensively, having lived in England, Greece, South Africa and Australia before settling down in the Mid-Atlantic region of the U.S. I love to turn classic meals into fabulous, whole-food, plant-based vegan creations that are prepared without sugar, salt or oil. Most days, I can be found in my happiest of places -- walking with our German Shepherd Dog, Prince, or at the chopping board in my kitchen experimenting with new flavor and food combinations that are elegant, sumptuous and remarkably straightforward to prepare. Supposedly eating this soup on New Year’s Day will bring you
good luck and prosperity. The black-eyed peas represent coins
and the collard green represent paper money. Either way it is
packed with flavor and loaded with nutrients. A perfect nourishing
soup for the winter.
1 cup onion, diced
1 cup carrots, diced
1 cup celery diced
1 red, yellow and orange bell pepper, diced
3 cloves garlic, minced
1 teaspoon smoked paprika
1 teaspoon ground cumin
1 teaspoon oregano
2 cans black eyed peas
1 can salt-free fire roasted tomatoes
4-6 cups water or vegetable stock
1 cup cooked oat groats (or other cooked grain–optional)
2 tablespoons red wine vinegar (optional)
3 collard leaves stripped, rough chop
salt-free seasoning and freshly ground black pepper to taste
Sauté the onion, carrot, celery and bell peppers in a large Dutch
oven or soup pot for 4-5 minutes. Add the garlic and herbs and
spices and sauté for 1- 2 minutes. Add the black-eyed peas,
tomatoes and water or vegetable stock to the pot and bring it to
a boil. Lower to a simmer, loosely cover with a lid and let it
simmer for 20 minutes. Add the oat groats and red wine vinegar
and heat for and additional 4 minutes and then
NOTE: Store extra in jars in the refrigerator for five days or
freeze.
