Last day of May 2020 at The Hoochery. We racked the 3 tanks of honey wine/mead we made at the beginning of the month. That means we transferred the liquid from the original tank to a new tank.

Leaving behind all the gunk and yucky stuff. Ok, lees and pulp. I will get pictures next month. We did initial tasting. The pomegranate is going to be awesome!

Now we watch and monitor as it ages.

Sunset at The Hoochery. When we bought the property, I made sure sunrises and sunsets were in the contract. Oh and stars as well. Here is a really colorful day to finish off the 4 tanks we made.

Quick update on The Hoochery status. July 2017 we received the approvals from the Yavapai County Board of Supervisors on the Hoochery.

However, the County Development department will not allow us to use the existing structure as it does not mean current county commercial code requirements.

That means we are need a new building. We are currently 8 months into the process of getting all our engineering etc work done so we can submit plans to the County to get our building permits.

God willing and the creek don't rise we will be submitting within the next month or so.
