When I was young, my grandmother would wake us up very early and we'd head down to the farm with a few workers and spend the whole day in the trees.

You learn fast which cherries to take. Deep red, heavy on the stem. The green ones stay. Anything else stays. Only the ripe ones make the cut.

By three in the afternoon, we'd haul everything up to the house and wait for my grandfather and father to come back with the truck. Load up. Then down to the factory.

At the factory, the real transformation begins. The cherries are pulped. The fruit stripped away to reveal the raw bean inside. Those beans go straight into clean, cold water to ferment for up to 48 hours. That's where the brightness develops. The winey depth. The thing that makes Kenyan coffee taste like nowhere else on earth.

Then they're spread thin on raised drying beds and turned by hand under the highland sun until the moisture is gone and the bean is ready.

That farm is still in my family. That memory is in every bag.

This is how we do it. The Kahoa pour over. 🫖☕️🇰🇪

Every cup starts the same way, slow, intentional, and rooted in where this coffee comes from.

Here's the process:

0:00: Set up your dripper on a clean server. Rinse your filter with hot water first to remove any paper taste, then discard that water.

0:10: Add your ground Kahoa. We're using about 20g, ground medium-fine. You'll smell it the moment it hits the filter.

0:20: The bloom. Pour just enough hot water (around 40ml, 200°F) to saturate the grounds and let it sit for 30 seconds. This releases the CO2 locked in fresh coffee. If it bubbles, that's a good sign.

0:50: Begin your main pour in slow, steady circles from the center outward. Keep the water level consistent and never pour down the sides of the filter.

1:00: Watch the crust form. That bloom and rise is Kenya doing what Kenya does.

1:10: Final pour. Slow and patient. Total brew time is 3 to 4 minutes from first pour.

The result? A clean, bright cup that carries everything the highlands of Nyeri and Kirinyaga put into it.

No shortcuts. Just good coffee, brewed right.
