Behind every patient-centered healthcare environment is thoughtful planning that supports both care teams and the people they serve.

🏥 Project Feature: BJC HealthCare Washington University Medical Center Plaza West Tower

At this new patient tower in St. Louis, foodservice planning plays an important role in supporting patient-centered care, operational efficiency, and long-term flexibility.

Rippe Associates partnered with and the project team to design a forward-looking healthcare foodservice operation serving the new patient tower, with flexibility for future growth, while also supporting patient meal delivery across the broader medical campus.

Project Highlights:
✔️ Hybrid meal delivery model combining scheduled tray service with room service functionality
✔️ Three dedicated traylines to support patient meal demand and service flexibility
✔️ Strategic adjacencies near patient elevators to streamline circulation and reduce transport time
✔️ Retail dining environment overlooking Forest Park with multiple foodservice concepts

This project reflects the power of thoughtful planning, healthcare foodservice expertise, and strong collaboration. 🚗✨ recently took us to Brookings, South Dakota, where Project Manager Mark Miller was onsite for a punchlist at South Dakota State University’s newly renovated Larson Commons dining facility!

Designed to elevate the student dining experience, this project features a completely transformed kitchen, dishroom, dining room, and serving areas, all brought together through a thoughtfully designed space filled with natural light, soaring ceilings, curved serving counters, and finishes that complement SDSU’s school colors.

Students can enjoy a variety of interactive dining experiences, including multiple action cooking stations, a Marra Forni pizza oven, and a standout “U-Cook” station where they can select ingredients, cook on induction burners, and create meals tailored to their tastes. The facility also incorporates a reusable clamshell return program, supporting convenience and sustainability for students on the go.

Over the past year, Ben has quickly become an invaluable part of the team through his passion for equipment, commitment to learning, and willingness to jump in wherever needed. His dedication, responsiveness, and positive attitude have made a lasting impact, and if you ask his teammates, it feels like he’s been part of Rippe for years.

🚗✨ takes us to Miami Beach, FL, where Sr. Project Manager Amy Fick was recently onsite for a punchlist at the Braman Comprehensive Cancer Center at Mount Sinai. 🏥

This coffee shop and bistro is anything but a typical hospital café: it is designed as a wellness-driven destination that blends hospitality, nutrition, and clinical awareness. With features like pre-order pickup cubbies for staff convenience and a menu centered around fresh, nutritionally focused offerings, the space is built to support patients, families, and caregivers alike.

Even more impactful, the entire facility embraces healing through design—flooded with natural light and offering calming bay views at every turn, creating an environment where the space itself contributes to care and comfort.

Happy 1 year anniversary to two incredible team members at Rippe Associates, Payton Hartman and Theresa Gervenak 🎉

From day one, both Theresa and Payton have brought curiosity, energy, and a genuine commitment to doing great work for our clients and our team. Over the past year, they’ve not only grown in their roles, but they’ve helped move Rippe forward.

Theresa has made her mark through her thoughtful approach and dedication to delivering meaningful insights. She shows up every day ready to learn, contribute, and make a difference.

Payton has brought a strong sense of ownership, positivity, and humor, consistently finding ways to add value and build strong relationships across the firm.

What stands out most, though, is the mindset they share. They’re both the kind of people who make things easier for everyone around them, pitching in, learning as they go, and consistently showing up in a way that supports the team.

🍽️ Kitchens That Work: Fundamentals of Foodservice Design | 1.0 LU

Commercial kitchens are one of the most infrastructure-intensive environments in a building. Early planning decisions around workflow, zoning, walk-ins, and equipment, directly impact spatial requirements, coordination, and MEP system design.

This program explores how foodservice planning integrates with architectural design and how early coordination can reduce risk, improve efficiency, and support long-term performance.
