SIU Carbondale is making national headlines after Forbes featured university researchers who are developing technology capable of turning plastic bottles and agricultural waste into protein-rich cookies.

The project, called µBites, uses a process that breaks down PET plastic — commonly used in water and soda bottles — along with agricultural waste such as leftover corn stalks and leaves. Engineered yeasts then help transform the broken-down materials into proteins, fats and other components that can ultimately be 3D-printed into cookie form.

Led by SIU associate professor Lahiru Jayakody, the research grew out of work for NASA’s Deep Space Food Challenge, which sought new ways to produce food for astronauts on long-duration space missions. Researchers say the technology could eventually have applications beyond space, including addressing food shortages and reducing plastic waste.

The project has drawn widespread attention, with SIU reporting coverage from Forbes, The Guardian, CNET, Popular Science, NewsNation and numerous other outlets around the world.

Carbondale officially hit 100 degrees Thursday, marking the city’s hottest day in more than two years.

According to Meteorologist Nick Hausen, Carbondale reached 100° for the first time since June 30, 2023. Hausen also noted that Thursday marked only the second time the city has reached the century mark since the brutal summer of 2012.

The triple-digit heat has become a relatively rare occurrence in Southern Illinois, with the region’s humidity often keeping actual air temperatures below 100°.

Southern Illinois University Carbondale has topped 12,000 students for the first time in eight years as the university reports major enrollment and retention growth for fall 2026.

SIU’s total enrollment reached 12,066 students, up 281 students — or 2.4% — from fall 2025. The new undergraduate incoming class grew 16% to 1,779 students, while the number of new undergraduate students from Southern Illinois jumped 24%.

Transfer enrollment increased 7%, online enrollment grew 14%, and the number of students living in on-campus housing increased 7%.

SIU also reported its first-to-second-year student retention rate climbed 7.2 percentage points to 73.9%.

Chancellor Austin A. Lane credited the growth to expanded efforts across the university to recruit and retain students.
