A lot of restaurant owners we talk to already carry the core policies you’d expect. Property, general liability, workers’ comp. On paper, it looks complete.

Where things get interesting is in the details. Property values that haven’t been revisited in a few years. Payroll classifications that don’t quite match how people are actually working across roles. Equipment that has become essential but isn’t fully accounted for.

None of it feels urgent during a normal week. It becomes very relevant when something breaks, someone gets hurt, or operations pause unexpectedly.

This blog gets into how those policies should be aligned with the way a restaurant actually functions day to day, so there are fewer surprises when it matters.

Spend a few minutes inside any restaurant and you start to see how much is happening at once. Staff rotating through shifts, equipment running constantly, customers moving in and out, vendors showing up in the middle of service. It’s a business that relies on rhythm and timing more than anything else.

Insurance tends to get handled once a year, often based on last year’s numbers and a quick renewal conversation. Over time, things drift. Buildout costs change. Equipment becomes more central to daily operations. Revenue patterns shift.

That gap usually stays invisible until something interrupts the flow, and then the question becomes whether the coverage actually reflects how the business runs today.

We put together a straightforward look at what restaurants should have in place and how to think about structuring it around real operations.

Andrew had one rule: no oysters.

So when oysters showed up in the challenge, he made the only logical choice.

He picked Pete to eat them instead.

What followed was betrayal, outrage, and a complete abuse of the decision-making power he had been given. Watch the latest World Cup Challenge and see if Pete survives the punishment.

The drama was real. The oysters were unfortunately real too.

A recent story we heard from a restaurant owner... It started like any other hiring decision. A bartender came in, interviewed well, and seemed like a solid addition to the team. Over time, there were issues, lateness, missed shifts, enough to put him on a performance plan and document it carefully.

When things didn’t improve, they made the call to let him go. Everything was handled by the book.

A few weeks later, the claim arrived. Discrimination. Hostile work environment. Retaliation. He had filed a similar claim against a previous employer, something no one at this business knew when they hired him.

They ultimately won. Their documentation held up. But the process still required legal counsel, time, and significant cost. The kind that pulls focus away from running the business.

That’s where EPLI comes in. It covers the defense, not just the outcome. Because even when you do things right, you still have to respond.

We break this down further in our recent blog. Link in the comments section.

Personal attention. Custom solutions. A consultative relationship that actually helps you understand your risks and your options.

That’s how we do it at Apex.

Because good insurance is about guidance, not pressure.

A restaurant owner recently shared a story that stuck with us. A young employee stepped into her first management role, eager to prove herself and keep things running smoothly. In the middle of a busy week, she received what looked like a routine vendor email regarding a discrepancy tied to a busy Saturday night. It felt urgent, it looked familiar, and she handled it the way a good employee does.

It turned out to be a phishing attempt. By the time the issue surfaced, credit card batch data had already been exposed. The following weeks were spent dealing with forensic IT, customer notifications, chargebacks, and the kind of reputational pressure that doesn’t just fade away.

What the owner said afterward was simple. This wasn’t about one employee making a mistake. It was a business exposure that had been sitting there all along.

Cyber risk in hospitality doesn’t announce itself. It blends into everyday operations. Training matters. Coverage matters. Both need to be in place before something like this happens.

Meet Lucy Busby.

Lucy is one of those people who genuinely enjoys what she does, and it shows. She’s been in the insurance world since 2017, found her stride as a broker, and has built her approach around being responsive, thoughtful, and easy to work with.

She’s also a North County local through and through, Solana Beach to Cardiff, with deep roots in the community and a strong connection to the people and businesses here.

If you need someone to walk you through your commercial insurance with clarity and care, Lucy’s your person. And if the conversation turns to where to eat afterward, she’ll have a few solid recommendations for that too.
