Have you tried our Whole Cluster Pinot? Whole-cluster fermentation is a w**emaking technique where entire bunches of grapes—stems and all—are put straight into the fermentation vessel, skipping the usual destemming step. This method is most famously used for delicate red varieties like Pinot Noir and Syrah to add spice, complex aromas. They must be ripe and brown (lignified) so they do not impart harsh, bitter flavors. Now you know, but there’s really only one way to find out - come try it for yourself! **ery **e

2021 Terroir Series - Grenache - Hook Vineyard - Santa Lucia Highlands
The SLH Grenache, made from Tablas Creek Clone at the Hook Vineyard, planted on granite sand, stony slopes and loamy well draining soils, shows off loads of pure varietal character and plummy red fruits, spice, light florals, anise and a touch of smoky cedary wood. This elegant and silky expression of Grenache was aged in used French oak for 25 months and bottled unfined and unfiltered. 🍷
