Crispy Broccoli Cheddar Tots 🥦🧀

Quick and easy low carb snack idea 💡

Servings: 16 tots

Ingredients:
1 (10oz) bag frozen broccoli rice (about 2 cups)
2 cups freshly shredded cheddar cheese (not the pre-shredded)
1 large egg
2 tbsp almond flour
seasoning to taste (I use garlic salt)

Instructions:
Cook the broccoli rice in the microwave according to the package directions. Using a fine strainer, drain and squeeze out as much of the excess liquid as you can; set aside to cool.

Preheat your oven to 400 degrees and line a large baking sheet with parchment paper.

In a bowl, mix together the broccoli rice, shredded cheese, egg, almond flour and seasoning to taste.

Make about 16 small balls with the mixture and place them evenly on your baking sheet. Smoosh them with your hands to flatten them out a bit.

In the center rack, bake for about 15 minutes (or until they start to brown), and then flip them over and contintue baking for another 8-10 minutes.

Eat alone or serve with a low carb sauce.

Recipe Notes:
You can use broccoli rice, cauliflower rice or a mix of both for this recipe.

One of our favorites!!!

1 tablespoon olive oil

4 chicken breasts (use 4 thin chicken breasts, or use 2 large chicken breasts, sliced in half, horizontally)

6 oz cream cheese, cold, and sliced into 8 slices

8 strips bacon, cooked, chopped

1 cup Cheddar cheese, shredded

Instructions:
Preheat the oven to 400 F.

Grease bottom of the casserole dish with olive oil. (I used the the oval casserole dish measured 13 inches x 9 inches x 4 inches deep.)

Add chicken breasts to the casserole dish.

Sprinkle chicken breasts with salt and pepper.

Top with (cold slices) cream cheese.

Top with chopped cooked bacon (drained from fat).

Top with shredded Cheddar cheese.

Bake, uncovered, for about 20-30 minutes, until the chicken is cooked through.

***The cooking time will depend on the thickness of your chicken breasts.

👉🏻We usually have with a green veggie cooked in olive oil for healthy fats!

An idea for you tuna fans!!

Tuna mixed with mayo, mustard, dill relish, salt, pepper, and seasoning salt. Cradled in a slice of Swiss cheese and topped with everything bagel seasoning.

I loves Cheezit Crackers, BUT, they are high in salt and carbs. From now on, this is my new snack 🙂
