Things Wine People Make Harder Than They Need To Be: Carbonic Maceration

Here we go. Muscadines starting carbonic.

The super simple version?

Instead of crushing the grapes first, we put whole berries into a tank, push out all the oxygen and add some CO2. This creates an environment for an enzymatic fermentation to start inside the grapes themselves. Yes. Inside each little grape.

All you really need to know is that it makes some damn good and ridiculously fruity wine.

And muscadine already knows a thing or two about being fruity. You can try last year's version while thinking about cool this is.

Things We Wine People Make Harder Than They Need To Be

Disgorging wines.

We love little bubbles, not big bubbles. Not foamy. Not soda like. We want bubbles that feel woven into the wine itself. Fine. Tight. Persistent. The kind that lifts fruit instead of getting hit in the face with piece of pie.

Getting there isn't glamorous.

It usually involves over carbonated test bottles, wine sprayed across the cellar, sticky clothes, frozen hands, and wearing half a bottle home.

Worth it? Every single time.

Those bubbles weren't injected by a machine. They were made one molecule at a time by fermentation itself.

Sometimes making wine harder is exactly what makes it better.

If you're going to make natural wine in the South, you'd better start with grapes that actually want to be here.

That's why we love Chambourcin.

While many European grapes spend our summers fighting humidity, fungal disease, and relentless pressure from the environment, Chambourcin was bred with resilience in mind. Thick skins. Loose clusters. Better disease tolerance. The result is fewer interventions in the vineyard and more opportunity to let nature lead.

For us, that's the whole point.

Less spraying. Less correcting. Less forcing a grape to become something it never wanted to be.

Instead, we get to focus on making honest wine.

This year's 2025 Chambourcin Rosé Pét Nat begins with hand picked fruit from S&W Vineyard in Southern Virginia, just a short drive from our winery. Native yeast takes it from there. Six months resting on the lees. Hand disgorged. Nothing rushed.

The glass is all summer.

Wild strawberry. Watermelon. Ripe cherry. Raspberry. A little earth. A crack of white pepper. Fine bubbles that keep reaching for another sip.

Maybe hybrids aren't the compromise people once thought they were.

Maybe they're exactly what Southern wine has been waiting for.

Crossed Paths is a wine no one asked for, and yet we had to make it anyway. When Bailey, was experimenting and blending some Malbec and muscadine together, it was instantly a yes. This is what happens when you stop trying to please everyone, stop playing by the old rules and start making something that feels like the truest us.

It is a reverse mullet. Party in the front, business in the back. Muscadine leads with that bright Carolina punch, then the Malbec rolls in with a mushroomy, mossy finish and a little barnyard funk that gives it that signature Botanist edge. It is wild, it is structured, and it somehow makes perfect sense once you taste it.

Try it or don’t cross paths with it. Up to you!
