Sarah Charles, Director of Food & Beverage at The Flat Iron Hotel, brings a sustainability-minded approach to beverage, creating programs that move in step with the kitchen and the seasons—from collaborative menu development at Luminosa to inventive partnerships that root each experience in place.

Matt Weinstein, Culinary Director of Lodging, continues to elevate dining across our hotels throughout the Southeast—mentoring chefs, strengthening teams, and ensuring every guest experience reflects both precision and heart.

Whitney Hicks, Executive Pastry Chef in Charlotte, leads with both discipline and imagination—crafting desserts that feel true to each concept while investing deeply in the next generation of pastry talent.

This week marked an exciting milestone for The Indigo Road as we officially broke ground on The Chambray in Roswell, Georgia — a 125-key boutique hotel that will join Hyatt’s neighborhood-focused JdV Collection, with opening anticipated in summer 2027.

In partnership with DSM Real Estate Partners and Stafford Development Company, this project reflects our shared commitment to building places that feel deeply connected to their community. Inspired by Roswell’s rich textile heritage and designed in collaboration with Matt Mitchell Design, David Thompson Studio, and 617 Studio, The Chambray will be rooted in both history and forward-thinking hospitality.

We were honored to celebrate alongside our partners and community leaders, including our own Gabriel Perez, whose leadership continues to shape the future of lodging across our portfolio.

The Chambray will feature 125 guestrooms, Indigo Road food and beverage concepts including a coffee and patisserie bar, a Mediterranean-inspired restaurant, and a rooftop sushi restaurant, along with meeting space, wellness amenities, and walkable access to Canton Street, Southern Post, and the natural beauty of Roswell’s riverfront and trail systems.

We’re honored to see our founder, managing partner, and chief visionary officer Steve Palmer featured in the February issue of Charleston Magazine, in a powerful cover story by Robert F. Moss that traces the growth of Indigo Road Hospitality Group — and the philosophy behind it.

From a single Oak Steakhouse on Broad Street in 2009 to more than 40 restaurants, bars, and hotels across seven states today, Steve has built one of the South’s most respected hospitality groups by leading with people first. The article highlights Indigo Road’s expansion into markets from Charleston to Bentonville, Nashville to Tampa, and the launch of our growing lodging portfolio, including Skyline Lodge and Hotel Richemont.

On the tenth day of Indigo Road Christmas, we congratulate our TEN graduates from the 2025 Hospitality U class.🎓

Teammates from across The Indigo Road family came together for our third Annual Hospitality U — our immersive, three-day development experience designed to nurture the next generation of leaders.
Each student brought experience, positivity, and care with every session, creating an atmosphere where growth felt natural and inspiration was shared by all.
