From Onyx, a Colombia Aponte Honey
My specs: 40g in, 640g out (1:16), 5min brew time, grind size 21
Tasting notes: Floral (rose?), white grape juice, cantaloupe, black tea. Slight sparkly acidity. The body is really clean and almost silky until the end, where the over-extraction is revealed. A slight silty heaviness and a linger that just overstays its welcome tells me that I should grind this coffee a bit coarser. I believe that would bring out a bit more sweetness, as well.
