A traditional Iberian dish, gazpacho is a staple for hot summer days since, unlike many soups, it is meant to be served cold! While there are many popular variations, classic gazpacho is made by blending bread, olive oil, vinegar, garlic, bell pepper, and tomato with a garnish of cucumber. Simple and delicious!
