Walnut “Meat” Tacos by Neba Ankh Wellness
A nourishing plant-based recipe created to support gut balance, heart wellness, stress reduction, and mindful eating through fresh ingredients and soulful preparation.
Ingredients
Walnut Meat
1 cup raw walnuts
Water for soaking overnight
Fresh Seasoning Blend
1/2 onion, chopped
2 garlic cloves, minced
Fresh cilantro, chopped
Spices
1 tsp cumin
1/2 tsp black pepper
1/2 tsp paprika
Small pinch sea salt
Dash lemon pepper seasoning
Fresh Additions
Fresh lemon or lime juice
Plant-based cheese
Plant-based sour cream
Mixed greens
Fresh salsa
Fresh guacamole
Tortillas
Corn tortillas, baked until crisp
OR
No-bake tortilla chips for a lower-sodium option
Instructions
Step 1 — Soak the Walnuts
Soak 1 cup of walnuts overnight in water.
Drain and rinse well the next day.
Step 2 — Prepare the Walnut Meat
Place walnuts into a food processor and pulse until the texture resembles ground meat.
Do not overblend into a paste.
Spread the walnut mixture onto a paper towel or clean towel to absorb excess moisture.
Step 3 — Build the Flavor
Add chopped onions, garlic, cilantro, cumin, black pepper, paprika, lemon pepper, and a light pinch of sea salt.
Squeeze fresh lemon or lime juice over the mixture and stir well.
Step 4 — Prepare the Tortillas
Lightly bake corn tortillas until crisp and golden.
You may also use no-bake tortilla chips if watching sodium intake.
Step 5 — Assemble
Layer mixed greens onto tortillas or chips.
Top with walnut meat, fresh salsa, guacamole, plant-based cheese, and sour cream.
Serve fresh and enjoy.
