Ever wonder how a tiny grape transforms into a complex, delicious glass of wine? 🍇✨
It’s all about the magic of fermentation!
Behind the scenes, a brilliant biological takeover is happening. Microscopic fungi called Saccharomyces cerevisiae (aka winemaker's yeast) devour the natural sugars in grape juice. Their reward? They convert that sugar into alcohol, heat, and carbon dioxide (CO2).
But it’s not just about the alcohol! During this intense chemical dance, yeast cells create esters and phenols—the aromatic compounds responsible for those amazing notes of blackberry, vanilla, or crisp citrus you smell in your glass. 🧪🍷
Speaking of science in action... although we are likely more than a month away from our first harvest (which often kicks off at the beginning of August at our Southwest Wine Center at Yavapai College estate vineyard - right here in Clarkdale, AZ!), our incredible Yavapai College viticulture and enology students are officially ready, willing, and able to get their hands dirty. 🧑🔬💪
