Ecstatic for today’s release of our long-anticipated collaboration with our friends at . Come on down this weekend for a taste of what we’ve been working on for the last two years or so! The barleywine being released alongside our collab stout is one of the best b**rs that’s come out of Buffalo - not hyperbole! We hope you all enjoy these exciting b**rs as much as we do. 🍻

We've got THREE Barrel Aged Bottles for you this Friday at our Fall Barrel Aged Bottle Release!

1. IT IS WHAT IT ISN'T - Imperial stout aged in Apple Brandy Barrels with coffee, vanilla, and marshmallows - This b**r is the result of a collaboration lasting 18 months between Big Ditch and the Buffalo Barrel Project, with a simple goal of making a beautifully balanced barrel aged b**r. We began by aging a 10% ABV Imperial Stout in Apple Brandy barrels for 12 months. We then blended this barrel aged stout with another 11% Imperial Stout. To this blended stout we added fresh coffee, vanilla, and marshmallows, to lend sweetness to the blended b**r. The complexity of this b**r is off the charts; this b**r is everything that simple b**rs aren't. 10.5% ABV.

2. THE TOWER - Rye Wh***ey Barrel Aged Barley W**e - Our brewery sits in the shadow of the Electric Tower, which is where the New Year's Eve ball drops in Buffalo, and we brew The Tower to celebrate the coming of the new year. This b**r was originally brewed in January 2021. We aged the b**r in a Willett Rye Wh***ey barrel as we hoped the subtle rye spice would complement the toffee and honey character of the base b**r. We aged this b**r in the barrel for 18 months. The result is amazingly smooth for its 10.5% ABV. We think this is one of the best barrel aged b**rs we've ever created. We hope you enjoy. 10.5% ABV.

3. BLOSSOM STREET - Helles L***r Aged in Chardonnay Barrels - Our brewery is bordered by Blossom Street, which is an alleyway behind the brewery where our brewers enjoy b**rs at the end of their shift to celebrate a job well done. Our Helles l***r is a b**r that is particularly enjoyed during these shift b**r sessions. An idea that "blossomed" over these shift b**rs was aging our Helles in a Chardonnay barrel (3x times used) to add light oak and white grape character to the bready malt and lightly spicy hop character of the base b**r. There is only a soft kiss of barrel character in this b**r; the b**r is well suited for consumption on a warm day, but also for contemplation while sitting by an open fire. We hope you enjoy. 5% ABV.

🍁🍁it’s maple szn🍁🍁

finally! our bourbon barrel aged maple syrup collaboration with Maple Glen Sugar House is here 🙏🏻🙏🏻 We took some of the darkest grade syrup produced in the 20/21 season and tossed it into a freshly dumped Buffalo Trace Distillery barrel. After resting through the warmer months and soaking up all that bourbon goodness, it is packaged up and ready to be enjoyed.

When we say we mean it! A new fun experimental project starting today. Our friends at EvilTea Co. supplied 25lbs of their black tea blend that we then filled up a store pick Clyde May's Wh***ey barrel with. We will let this tea absorb all the awesome leftovers in the barrel before pulling it back out. Looking forward to seeing what complexity the barrel will add. Might have another fun project for some of the tea as well 😉🫖☕️

Yesterday we got to go hang with our friends at Eli Fish Brewing Company again for the day. We put together a huge double mashed stout headed for barrels. After an extended boil to get her nice and thiccc, away she will go into 14yr Willett Distillery bourbon barrels for roughly 14-18mo. We look forward to this one in what will probably be a 2023 release!!
