Cleaned out a pumpkin today so we could carve it. Did that but also decided to roast the seeds. We got a good amount from a medium sized pumpkin, cleaned and dried them. Then roasted them with cinnamon and maple syrup for something different

Who reads Labels?
One ingredient that seems to be in so many foods is high fructose corn syrup (HFCS). Is it OK or not? Excessive consumption (remember it’s in everything) disrupts gut health which drives inflammation and metabolic issues. A recent study shows it impacts intestinal tumors, nevermind it being linked to obesity, diabetes and high blood pressure. Other reasons to ditch the food with it:
⏲️ chronically elevated blood sugar levels
⏲️ drives inflammation (heart disease?)
⏲️ overtakes liver processing (fatty liver
Disease)
⏲️ can create unhealthy food cravings -
Leading to more!

After spending a few days at the Elephant Nature Park in Chiang Mai Thailand, I developed a deep fondness and respect for Sangduen “Lek” Chailert. Known as Thailand’s “Elephant Whisperer”, she has spent her life rescuing animals (especially elephants) and working to stop animal abuse. Though I have not seen her in many years, she and the Elephant Nature Park continue to have a special place in my heart.
