Dandelion greens now available!! Check out this recipe for Loaded Rice- the Spring version!

Start by sauteeing some spring onions in some butter. Add in green garlic, and some assorted mushrooms. Let everything cook while you chop up your dandelion greens. Add those to the pan and then add in about a 1/4c white wine or lemon juice. Next, add in 4c rice and 2 boxes broth to cover. While it’s simmering, chop up some quicker cooking veggies, like squash and zucchini. Add them to the pan and give it a stir, season with salt and pepper. Cook until the broth is absorbed and the rice is fluffy.
