Real talk about healthy eating! Don’t assume It comes easy for me…

Sometimes I feel like people think that just because I teach about healthy eating for Type 2 Diabetics, I've got it all figured out and I never have to worry about my own diet anymore. But let me tell you, that's not true at all!

Truth is, most days are pretty good and I've got a solid meal plan in place to manage my blood sugar levels. But there are definitely days when I wake up and the last thing I want to do is eat a salad or count carbs.

To be honest, I'd much rather indulge in my favorite dessert. But hey, right now this is my reality and I know what I need to do to be my best self for my own health and the people who matter to me.

The thing is, there are gonna be times when you just don't feel like eating healthy. Times when you give in to those cravings. And you know what? That's okay! Because healthy eating isn't about pretending it's always easy…

It's about learning, practicing, and developing the skills and habits that make it less of a struggle in your everyday life.

As a type 2 diabetic the type of carbs you eat are very important. But when I was first diagnosed I didn’t know what a carb was or how they contributed to my blood sugar levels!

And one of the biggest misconceptions that kept me stuck was this idea that if I just ate anything that was considered healthy my high blood sugars would go away.

This “solution” didn’t take into account that all healthy foods aren’t created equal for type 2 diabetics.

This meant that despite all my efforts to manage my blood sugar with healthy eating…The foods I was eating were still sending my blood sugar soring leaving me feeling like I was back at square one.

It wasn’t until I started paying attention to the type of carbs I was eating at any given meal. Which helped me achieve more permanent results.

3 meal prep tips that will save you HOURS in the kitchen!

1. When preparing your meals and snacks, make a little extra for the next day.

2. Keep a notebook of all your meal and snack ideas. This way you don’t have to waste time figuring out what meals you’re going to make for the upcoming week.

3. Batch a curtain number of menu plans then rotate them. By doing this you don’t have to create a plan every week.
