Our Tasting Room is open 365 days a year in beautiful Cornville, Arizona! The Tasting Room hours are Sunday – Wednesday 11AM – 7PM and Thursday – Saturday 11AM – 9PM.

🍇🍷 Fermenting vs. Barrel Aging 🍷

Fermentation makes the wine. Barrel aging helps shape it.

🍇 Fermentation: Yeast turns grape sugar into alcohol while developing flavor, color + texture.

🪵 Barrel aging: Time in oak can soften tannins, add texture and bring layers of spice + complexity.

Basically… fermentation is where the magic starts. Barrel aging is where the wine grows up. 😉🍷

🍇🍷 What the Heck Is a Punchdown?

During fermentation, grape skins + solids naturally float to the top of the tank, creating a thick layer called the cap. That’s where the Punchdown + Pour Over comes in!

Our winemaking crew gently pushes that cap back down into the fermenting juice, helping extract color, flavor, tannins + all those delicious grape-goodies from the skins. 🍇

It also keeps the fermentation healthy + helps create a more balanced, expressive wine.

Basically… we give the grapes a little workout so you can enjoy the results in your glass. 😉🍷

Hard work in the cellar = happy wine drinkers. The more you know…✌🏽
