Between August and early September, nature offers the eggplant, a vegetable with intense color and spongy flesh found in kitchens around the world. The eggplant (*Solanum melongena*) has a history as old as plant domestication, fascinating botanical characteristics, and culinary versatility that make it almost indispensable. Botanically speaking, the eggplant belongs to the Solanaceae family, alongside tomatoes, potatoes, and peppers. Although commonly considered a vegetable, its fruit is technically a berry. It originated in Asia—likely between India and Southeast Asia—and descends from wild, thorny, and bitter ancestors such as *Solanum insanum*. Genetic studies indicate that the eggplant was domesticated long ago; over time, selective breeding has reduced thorns, sweetened the flavor, and fostered the emergence of numerous shapes and colors. Varieties come in long and dark, round and purple, white, striped, and green forms. Each type possesses specific organoleptic qualities: long, dark purple varieties—such as the classic Neapolitan—have firm flesh and a delicate flavor, rendering them suitable for grilling or for making *parmigiana*. Round, violet varieties tend to become creamier after cooking and are ideal for sauces or fillings. White eggplants are generally less bitter and very tender.
