Timber Creek Distilling was formed by Camden Ford and Aaron Barnes, neighbors and friends here in Destin, Florida. Cam and Aaron share the same vision, to take advantage of the best local fruits and grains here in Northwest Florida to make some great local spirits. Florida's #2 industry (behind tourism) is agriculture and here in Northwest Florida, we grow some great local corn, wheat, and rye gr

ains as well as plums, peaches, strawberries, blueberries, and muscodines. Right down the road in Louisiana is the US's largest sugar refineries turning local sugarcane into sugar and molasses. The distillery itself is located on 212 acres northeast of Crestview, Florida. Our brand new 10,000 square foot distillery hosts our distillery as well as a 4000 sq foot event space with room to party. Give us a call or stop by and try our amazing local spirits.

Today is photo shoot day.

One of the coolest parts of what we do is getting to see all of the brands we make lined up together in one place. Different names. Different stories. Different labels. But every bottle started the same way—with an idea, a recipe, and a lot of hard work.

We're spending the day photographing a collection of the private-label spirits we've helped bring to life. Some are established brands. Some are brand new. All of them represent entrepreneurs, businesses, and dreamers who decided to create something of their own.

It's always amazing to see just how many unique brands can come from a single distillery.

Now back to moving bottles, adjusting lights, and trying to get that perfect shot.

A cocktail should tell a story before you ever take a sip.

Over the last few weeks, We've been filling sketchbooks with hand-drawn cocktail concepts for an upcoming Timber Creek cocktail manual. Every drink starts as a rough sketch—just colored pencils, paper, and an idea. From Florida Negronis and Rum Runners to craft martinis, old fashioneds, and tropical favorites, these drawings are helping shape a guide that will eventually become a collection of recipes, techniques, and inspiration.

The goal isn't just to show what goes into a cocktail. It's to capture the personality of each drink before it ever reaches the glass.

There's still plenty of work ahead, but I wanted to share a peek behind the curtain and show where the creative process begins.

Meet Gary the Grain.

Gary started life as a kernel of corn growing under the Florida sun. He thought he was destined for greatness. He just didn't know greatness involved getting milled, mashed, fermented, distilled, and stuffed into a barrel.

Now Gary is on a mission to teach the world how whiskey is really made.

Over the next few weeks, he'll take you behind the scenes of the grain-to-glass process at Timber Creek Distillery. You'll meet rye, wheat, and barley. You'll learn what happens inside a mash tun, a fermenter, a still, and a barrel. Most importantly, you'll finally understand where your bourbon comes from.

Barrel Aging Explained: It's More Than Just Time in Wood

Barrel aging is not one single reaction. It's a moving overlap of extraction, filtration, oxidation, concentration, and slow chemical rearrangement, all governed by wood structure, char and toast chemistry, temperature swings, humidity, and time.

People describe it as "the spirit breathing," but the reality is more interesting: the barrel is a living composite material that behaves like a semi-permeable membrane, a reactive surface, and a temperature-driven pump.

Here's what's actually happening:

Extraction: The spirit pulls sweetness, spice, and structure from toasted oak. Char smooths and filters certain rough edges.

Oxidation: Oxygen ingress enables slow oxidation that builds complexity.

Esterification: Acids and alcohols gradually form esters, creating fruity and floral notes.

Evaporation: The "angel's share" concentrates the whole system while climate controls the speed of every step.

For a grain-to-glass distillery in Florida working with wheated bourbon-style whiskey, the environment can accelerate some of the most important mechanisms—especially extraction and cycling—making barrel selection, entry proof, and monitoring even more important than simply "time in wood."

Done well, Florida heat doesn't cheapen aging. It changes the kinetics. And kinetics, managed intentionally, can produce mature character with real depth.
